Berliner Weisse at Home: A Tart, Low-ABV Summer Beer You Can Brew in Two Weeks
There is a reason Napoleon's troops called Berliner Weisse the "Champagne of the North." It is bone-dry, aggressively effervescent, bracingly tart, and at 3β4% ABV, you can drink it all afternoon without losing your ability to form sentences. If you have never brewed a sour beer because the idea of waiting months for Lactobacillus and Brettanomyces to do their thing sounds excruciating, this is your gateway.
Why Kettle Souring Changes Everything
Traditional Berliner Weisse was soured through a mixed fermentation that took months. Kettle souring flips the script: you sour the wort before boiling, which means the entire souring process happens in 24β48 hours. You get the same lactic tartness without the long wait and without risking contamination of your other fermentation equipment.
The concept is straightforward. You mash and collect your wort, cool it to around 100Β°F, pitch Lactobacillus, hold it warm for 1β2 days until the pH drops to your target, then boil as normal and ferment with a clean ale yeast. The boil kills the Lactobacillus, so nothing funky touches your fermenter.

Tart, pale, highly carbonated, minimal hop presence. Often served with fruit syrups in Germany.
The Grain Bill: Deliberately Simple

- Wheat malt, 3 lbs (provides the characteristic haze and body)
- Pilsner malt, 2.5 lbs (clean base, very light color)
That is it. No specialty malts, no crystal, no adjuncts in the base recipe. The beauty of Berliner Weisse is in its simplicity. The grain bill stays out of the way and lets the lactic acid do the talking.
Mash at 148β150Β°F for 60 minutes. You want high attenuation here, a dry, fully-attenuated beer emphasizes the tartness and keeps the body light and refreshing. Every point of residual sweetness will dampen the sourness you are aiming for.
The Souring Phase: Lactobacillus at Work
After you collect your wort, this is where things get interesting. Here is the step-by-step kettle souring protocol:
- Collect and cool wort to 100Β°F (38Β°C), This is the sweet spot for most Lactobacillus strains
- Pre-acidify to pH 4.5, Add lactic acid (88%) a few milliliters at a time. This discourages unwanted bacteria like Clostridium that can produce foul, vomit-like flavors at higher pH
- Purge with CO2, Lactobacillus is anaerobic, so flush the headspace of your kettle with CO2 and seal it with plastic wrap. Oxygen exposure grows Acetobacter (vinegar) instead
- Pitch Lactobacillus, Good options include Omega OYL-605 (Lactobacillus Blend), a couple handfuls of uncrushed Pilsner malt (it harbors wild Lacto on the husks), or a pouch of GoodBelly probiotic juice
- Hold at 95β110Β°F for 24β48 hours, Use a heating wrap, fermentation heat pad, or insulated cooler with a sous vide stick
- Check pH periodically, Target pH 3.2β3.5 for a pleasant tartness. Below 3.0 gets aggressively sour
During kettle souring, the wort will develop a funky, slightly cheesy or sweaty aroma. This is completely normal and comes from isovaleric acid produced during the souring phase. It blows off during the boil and will not be present in your finished beer. Do not panic and dump it.
The Boil and Beyond
Once your wort hits the target pH, bring it to a full boil. This kills all the Lactobacillus and locks in the sourness level. Boil for 15β30 minutes, no need for a full 60-minute boil since you have very little hop addition and the gravity is low.
Hops are almost an afterthought in this style. Add just enough for 3β5 IBU, about 0.25 oz of a low-alpha hop like Hallertauer Mittelfruh at 15 minutes. You do not want hop bitterness competing with the lactic acid. The tartness is the hop equivalent in this beer.
Cool the wort, transfer to your fermenter, and pitch a clean, neutral ale yeast. US-05 or WLP001 work perfectly. Ferment at 66β68Β°F for about a week. With a starting gravity this low, fermentation finishes fast.
Adding Fruit: The Traditional German Way and Beyond
In Berlin, Berliner Weisse is traditionally served with a shot of raspberry syrup (Himbeersirup) or woodruff syrup (Waldmeistersirup) to cut the acidity. You can take this further by adding actual fruit during secondary fermentation.
Popular fruit additions that work well with the tart base:
- Raspberry, The classic. Add 1β2 lbs per gallon of puree in secondary for a vibrant pink beer with intense berry character
- Passion fruit, Tropical, tangy, pairs beautifully with the lactic acid. Use 1 lb per gallon of frozen puree
- Mango, Adds sweetness that balances the tartness. Use 1.5 lbs per gallon
- Tart cherry, Double-tart combination that sour beer lovers adore. Use 1 lb per gallon
Add fruit after primary fermentation is complete. The residual yeast will ferment the fruit sugars, so give it another 5β7 days before packaging. Always account for the extra fermentable sugar when calculating your final ABV, use our ABV calculator for the base beer and add approximately 0.5β1% for a heavy fruit addition.
Berliner Weisse should be highly carbonated, 3.0β3.8 volumes of CO2, significantly more than most ales. If bottling, use about 5 oz of corn sugar for 5 gallons (yes, more than usual). If kegging, carbonate at 30 PSI for 2β3 days, then reduce to serving pressure. The aggressive fizz is essential to the style's character and refreshment factor.
Common Kettle Souring Mistakes
- Not pre-acidifying: Skipping the lactic acid pre-acidification step risks Clostridium and Enterobacter growth, which produce genuinely nasty off-flavors. Always drop to pH 4.5 before pitching Lacto
- Oxygen exposure during souring: Keep that kettle sealed and CO2-purged. Acetobacter turns your sour beer into vinegar
- Souring too long: Check pH every 8β12 hours. Once you hit 3.2, start tasting. You can always stop early, but you cannot un-sour a beer that went to pH 2.8
- Under-carbonating: A flat Berliner Weisse is a sad Berliner Weisse. This style needs aggressive carbonation to lift the acidity and make it refreshing rather than puckering
Grain to Glass in Two Weeks
Here is a realistic timeline: Brew day and start souring on Saturday. Check pH Sunday evening, it should be close. Boil, cool, and pitch yeast Monday morning. Fermentation wraps up by the following Saturday. Add fruit if desired and wait another week, or go straight to packaging. Keg and force carbonate over 2β3 days. You are drinking tart, fizzy, sessionable sour beer less than three weeks from when you started. No other sour brewing method comes close to that turnaround, and the results are legitimately delicious.
