Brewing With Adjuncts: Rice, Corn, Oats, and Beyond
There's a persistent attitude in homebrewing circles that adjuncts are what cheap macro breweries use to cut costs. Budweiser uses rice, therefore rice in beer is bad. That logic falls apart the moment you taste a properly brewed Japanese rice lager, a corn-forward cream ale, or a silky oatmeal stout. Adjuncts aren't a shortcut. They're a deliberate ingredient choice that opens up textures, flavors, and styles you literally cannot achieve with barley alone.
I resisted adjuncts for years because of that bias. Then I brewed a cream ale with 20% flaked corn and finally understood why the style exists. The corn contributed a subtle sweetness and a clean, crisp finish that all-barley versions just couldn't match. Now adjuncts are a regular part of my recipe design toolkit.
What Counts as an Adjunct?
Technically, any fermentable ingredient that isn't malted barley is an adjunct. That includes other grains (wheat, rye, oats, rice, corn), sugars (honey, maple syrup, candi sugar, molasses), and even fruit. For this article, I'm focusing on grain-based adjuncts since they're the most commonly used and the most misunderstood.
The Big Six Adjunct Grains

The darling of the NEIPA movement, and for good reason. Oats add a silky, creamy mouthfeel and a subtle, rounded sweetness. They also increase protein content, which contributes to the stable haze in New England-style IPAs. Typical usage is 5-20% of the grain bill. At the low end you get a touch of body enhancement; at 15-20% you get that pillowy, juice-box texture hazy IPA drinkers love.
Oats also work beautifully in stouts. An oatmeal stout with 10% flaked oats has a velvety quality that regular stouts lack. The oats don't add much flavor of their own, they're all about texture.
Flaked Corn (Maize)
Corn lightens body, dries out the finish, and adds a subtle, slightly sweet, clean character. It's the defining adjunct in American cream ales, American lagers, and pre-Prohibition pilsners. Usage ranges from 10-40% of the grain bill. At 20%, you'll notice a cleaner, crisper character. At 40%, the corn character becomes a noticeable part of the flavor profile.
If you've ever wondered why a good cream ale tastes so crushable and refreshing compared to an all-malt blonde ale, corn is the answer. It creates fermentable sugars without the residual sweetness and body that barley contributes.
Rice
Rice is the most neutral adjunct available. It contributes almost zero flavor, just fermentable sugars that lighten body and dry out the finish even more than corn. Japanese rice lagers use 20-40% rice to achieve that incredibly clean, light, dry character. It's also used in some Belgian styles to boost gravity without adding body or flavor.
Like raw corn, raw rice requires a cereal mash. Flaked rice skips that step. Rice hulls (a different product entirely) don't contribute flavor or fermentable sugar, they're used to prevent stuck mashes when brewing with high percentages of huskless grains like wheat or oats.
Wheat (Unmalted / Flaked)
Unmalted wheat adds haze-forming proteins, improves head retention, and contributes a slightly bready, doughy character. Belgian witbier traditionally uses 40-50% unmalted wheat alongside pilsner malt. At lower percentages (10-20%), wheat improves foam stability without dramatically changing flavor.
Note: malted wheat is different, it has its own enzymes and a stronger wheat flavor. Unmalted/flaked wheat is the more neutral option and better for adding body and haze without a pronounced wheat taste.
Rye (Flaked or Malted)
Rye is the spicy one. Even at 10-15% of the grain bill, rye adds a noticeable peppery, slightly dry, bread-crust character. It also creates a viscous, slightly oily mouthfeel that's very distinctive. Rye IPAs, rye pale ales, and rye saisons all benefit from that spicy complexity.
Fair warning: rye is notorious for causing stuck mashes because it creates an incredibly gummy, sticky consistency. If you're using more than 10% rye, add a pound of rice hulls to your mash to keep things flowing.
Flaked Barley
Wait, barley is an adjunct? Flaked (unmalted) barley is, yes. It adds body, head retention, and a slightly grainy character without the enzymatic power of malted barley. It's a traditional ingredient in dry Irish stout, Guinness uses a significant percentage of flaked barley. At 5-10%, it boosts head foam and adds a smooth, creamy quality.
How Much Is Too Much?
Base malted barley (or malted wheat) provides the diastatic enzymes needed to convert starch into sugar during the mash. Adjunct grains contribute starch but no enzymes. So you need enough base malt in the mash to convert everything. The general rule:
- Safe zone: Up to 30% total adjuncts with standard 2-row or pilsner base malt
- Pushing it: 30-50% adjuncts works if your base malt has high diastatic power (6-row malt is the traditional choice for high-adjunct recipes)
- Risky: Above 50% adjuncts, you may get incomplete conversion and a starchy, sweet wort that yeast can't fully ferment
For most homebrewers, keeping adjuncts under 30% of the total grain bill is the sweet spot. You get the flavor and texture benefits without conversion problems.
Quick Reference: Which Adjunct Does What
- Want lighter body and crisper finish? Rice or corn at 15-25%
- Want silky mouthfeel and haze? Oats at 10-20%
- Want better head retention? Wheat or flaked barley at 5-15%
- Want spicy complexity? Rye at 10-20%
- Want a truly light, dry beer? Rice at 25-40% with a clean lager yeast
