Hefeweizen Recipe: Dialing In the Banana and Clove Balance
Hefeweizen is one of the most misunderstood styles in homebrewing. People obsess over the grain bill, the wheat-to-barley ratio, the decoction mash schedule, and those things matter, but they're not what makes or breaks your hefeweizen. The yeast does.
I've brewed probably forty hefeweizens, and I can tell you that the same exact recipe, brewed two weeks apart with different fermentation temperatures, can taste like two completely different beers. One will taste like banana bread in a glass. The other will taste like you dropped a whole clove into wheat tea. The recipe below is dialed in, but the real magic is in the fermentation notes.
The Science: Banana vs. Clove
Bavarian weizen yeast (Saccharomyces cerevisiae var. hefeweizen) produces two key flavor compounds:
- Isoamyl acetate, banana character. An ester produced during active fermentation. More is produced at higher temperatures, lower pitch rates, and with less dissolved oxygen at pitching
- 4-vinyl guaiacol (4-VG), clove/spice character. A phenol produced from ferulic acid in the malt. More is produced at lower temperatures, with a ferulic acid rest in the mash, and with healthy, well-oxygenated yeast
The Recipe: Bavarian Hefeweizen (5 Gallons)
White Labs WLP001 California Ale Yeast (PurePitch)
Liquid Chico-strain yeast, accentuates hop flavor, attenuates well, the cult IPA strain since 1995.

- 5.5 lbs White Wheat Malt, at least 50% wheat is traditional and legally required in Germany
- 4.5 lbs Pilsner Malt, German Pils preferred for authenticity
- 0.5 lb Munich Malt (10L), adds a touch of bready depth
That's 10.5 lbs total, with a 52/43/5 wheat/Pils/Munich split. Some recipes go up to 60-70% wheat, which gives more body and haze but can make lautering a nightmare. 50-55% wheat is the sweet spot for flavor and practical brewhouse efficiency.
Hop Schedule
- 0.75 oz Hallertau Mittelfruh, 60 minutes (~12 IBU)
One hop addition. That's it. Hefeweizen should have 8-15 IBU, just enough to keep it from being cloyingly sweet. This is not a beer where hops contribute to the flavor or aroma. Yeast (The Most Important Ingredient)
- Top choice: Weihenstephan W3068 (Wyeast 3068), the classic. Balanced banana and clove with good attenuation
- More banana: White Labs WLP300, tends to push banana-forward at most temperatures
- More clove: Fermentis WB-06, dry yeast option that leans spicy/phenolic
Mash Schedule: The Ferulic Acid Rest
This is where hefeweizen brewing gets specific. If you want clove character, you need a ferulic acid rest in your mash. Ferulic acid is a precursor compound in malt that the yeast converts into 4-VG (clove flavor) during fermentation. More ferulic acid in your wort = more clove potential.
- Ferulic acid rest: 113F for 15-20 minutes
- Saccharification rest: 152F for 60 minutes
- Mash-out: 170F for 10 minutes
Fermentation: Where the Magic Happens
For balanced banana + clove (recommended first attempt)
- Pitch yeast at 62F with moderate wort aeration
- Hold at 64F for the first 48 hours
- Let free-rise to 68F over the next 2-3 days
- Hold at 68-70F until fermentation completes (usually day 7-10)
For banana-forward
- Under-pitch slightly (use about 75% of a normal pitch rate)
- Minimal wort aeration (just a gentle shake, no pure O2)
- Pitch at 66F, let rise to 72F within 24 hours
- Hold at 72F through completion
For clove-forward
- Full pitch rate with excellent aeration
- Include the ferulic acid rest at 113F
- Pitch at 60F, hold at 62F for 3 days
- Slowly rise to 66F for completion
Packaging Notes
Carbonate to 3.0-3.5 volumes CO2, significantly higher than most ales. This effervescence is essential to the hefeweizen experience. If bottle conditioning, use 5-5.5 oz of corn sugar for 5 gallons. The high carbonation creates that fluffy, mousse-like head and the spritely, refreshing mouthfeel.
Do NOT filter or fine this beer. The haze IS the style. Hefeweizen should be cloudy with suspended yeast. When pouring from a bottle, swirl the last half-inch of beer to rouse the yeast sediment and pour it into the glass. The yeast adds flavor, body, and visual authenticity.

Serving
Serve in a proper weizen glass (the tall, curvy ones) at 45-50F, slightly warmer than most beers. The warmer temperature opens up the banana and clove aromatics. Pour aggressively to generate a thick, fluffy head. A properly poured hefeweizen should have 2-3 fingers of dense, white foam that lasts the entire glass.
What to Expect
A well-made hefeweizen should smell like banana bread with hints of clove and vanilla before you even take a sip. The flavor follows the nose: soft wheat sweetness, ripe banana, gentle spice, with a dry, slightly tart finish from the wheat. The mouthfeel is creamy despite the high carbonation, that's the wheat protein creating body.
If your first batch is banana-heavy or clove-heavy, don't stress. Now you have a baseline. Adjust temperature and pitch rate on the next batch and you'll converge on your ideal balance. Hefeweizen is the ultimate "brewer's process" beer, same recipe, different technique, completely different result.
