Oatmeal Stout Recipe: Silky, Roasty, and Dangerously Easy to Drink
If IPAs are the loud friend who dominates every conversation at the party, oatmeal stout is the one sitting in the corner with a leather armchair and a good book, quietly being the most interesting person in the room. It doesn't demand attention. It just rewards it.
I brew this recipe at least three times a year, usually when the weather turns cold but honestly whenever I want something that feels like a warm blanket in a glass. The oats give it a silky, almost creamy body that regular stouts can't touch, and the roast character is dialed to "cozy fireplace" rather than "burnt toast." It's the beer I hand to people who say they don't like dark beer, and it converts them almost every time.
Why Oats Change Everything
Oats contribute proteins and lipids (fats) to the beer that dramatically change mouthfeel. Barley is relatively lean, oats are not. Those proteins create body and a silky texture, while the beta-glucans (a type of soluble fiber) add viscosity. The result is a beer that feels heavier and creamier than its gravity would suggest. A 5% oatmeal stout can feel as rich as an 8% imperial.
The Recipe: Velvet Oatmeal Stout (5 Gallons)
Briess Caramel/Crystal 60L Crushed Malt 1 lb
Medium crystal malt, adds caramel sweetness, copper color, and body to ambers, browns, and red ales.

- 8 lbs Maris Otter, biscuity English base malt with more character than American 2-Row
- 1.5 lbs Flaked Oats, the star ingredient. 15% of the grain bill for noticeable silkiness without turning the beer into porridge
- 0.75 lb Chocolate Malt (350L), smooth, dark chocolate character without harsh astringency
- 0.5 lb Crystal 60L, caramel sweetness and body
- 0.25 lb Roasted Barley (500L), just a touch for coffee notes and color. Too much makes it acrid
- 0.25 lb Black Patent Malt, deepens color and adds a dry edge

Hop Schedule
- 1 oz East Kent Goldings, 60 minutes (~28 IBU)
- 0.5 oz Fuggle, 15 minutes (flavor, mild earthy/spicy character)
This is a malt-forward style. The hops are supporting actors, they provide enough bitterness to balance the malt sweetness and prevent the beer from being cloying, but they shouldn't be identifiable as hop flavor. Yeast
- Primary choice: Safale S-04 (English Ale), reliable, clean with mild fruity esters that complement the malt. Dry yeast, easy to use, consistent results
- Liquid option: Wyeast 1968 (London ESB) or White Labs WLP002, more fruity and complex, but floccs hard. Plan to rouse the yeast during fermentation if it stalls
Water Notes
London-style water works beautifully for stout, moderate calcium, moderate bicarbonate, low sulfate. If you're adjusting, target: Ca 100ppm, SO4 50ppm, Cl 75ppm. The higher chloride-to-sulfate ratio pushes the beer toward smooth, round maltiness rather than dry bitterness. But honestly? Don't overthink water for stout. The roasted grains naturally acidify the mash, so pH is rarely an issue.
Brew Day Walkthrough
Mash
Single infusion at 154F for 60 minutes. The slightly higher mash temperature (compared to, say, a pale ale at 150F) preserves more dextrins, which adds body and supports the creamy oat character. You want this beer to feel rich, not thin. If you mash too low, the oats won't compensate, you'll get a dry, roasty beer that misses the whole oatmeal stout point.
Boil
60-minute boil. Add EKG bittering hops at 60, Fuggle at 15. Nothing else needed. If you want to add a half-teaspoon of Irish moss at 15 minutes for clarity, you can, but oatmeal stout is meant to be somewhat hazy from the protein content of the oats, so don't stress about crystal clarity.
Fermentation
Pitch S-04 at 64-66F and hold steady for 3-4 days, then let it free-rise to 68F for the remainder. Total fermentation time: 10-14 days. S-04 is a fast, vigorous fermenter, don't be alarmed by the aggressive krausen in the first 48 hours. It'll drop clear relatively quickly.
After primary fermentation is complete, consider a 2-3 day diacetyl rest at 68F before cold-crashing or packaging. Stouts with residual diacetyl taste buttery in an unpleasant way, and the roast character can mask diacetyl during early tasting, making it a sneaky off-flavor in dark beers.
Variations Worth Exploring
- Coffee oatmeal stout: Add 4 oz of coarsely ground coffee (cold-brewed in 8 oz of water) at packaging. Or add whole beans directly to the fermenter for 24-48 hours. Start with less than you think, coffee in beer is potent
- Vanilla oatmeal stout: Split 2 vanilla beans lengthwise and add to secondary for 3-5 days. The vanilla amplifies the creamy, dessert-like quality without making it sweet
- Chocolate oatmeal stout: Add 4 oz of cacao nibs to secondary for 5-7 days. Adds chocolate aroma and a subtle bitterness that complements the roasted malt
- Maple oatmeal stout: Add 8-12 oz of real maple syrup at high krausen (day 2-3 of fermentation). Most of the sugar ferments out, leaving maple aroma without cloying sweetness
Expected Results
OG around 1.058, FG around 1.015-1.018. ABV approximately 5.2-5.6%. The beer should pour dark brown to black with a tan, creamy head that lingers. The aroma should be chocolate, light coffee, and maybe a hint of caramel. The first sip should feel silky, noticeably smoother than a dry stout or porter, with layered flavors of chocolate, light roast, toffee, and a dry finish.
It's the kind of beer that makes people pause after the first sip and say "wait, you made this?" And honestly, that never gets old. No matter how many batches you've brewed, that reaction is still the best part of the hobby.
